Steamed Chicken With Scallion Ginger Sauce
This is a classic chinese banquet dish that is a great way to add some flavor to your boiled chicken which if you are like me is a really safe food for when you are highly reactive. Ginger is anti-inflammatory and this sauce is a good way to eat a crapload of it thats also delicious. You will really taste the quality of the chicken you use for this so get the best you can.
Ingredients:
Chicken breast or thighs skin on
1 bunch scallions
3-4 inches of ginger
1/4 cup neutral oil with high smoke point
Salt
Instructions:
Season chicken lightly with salt
Add your chicken to the steamer and steam until just cooked through. (Time will vary based on pieces chosen)
Chop the scallions finely and grate the ginger into a heat safe bowl.
Heat the oil in a small pan until just smoking
Pour the oil over the aromatics and mix together
Salt the sauce to taste
To store freeze chicken and sauce seperately. Sauce freezes well for long periods so you can make a big batch in advance and then use with freshly steamed chicken later.
